Hôtel Restaurant Les Prés is a refined countryside boutique retreat in Saint-Hilaire-le-Châtel, in the heart of Normandy’s Perche region. Just two hours from Paris, this historic estate—once a hunting lodge for the Lords of Pigeon and later a convent—has been meticulously restored into a serene haven where heritage and contemporary elegance coexist. Surrounded by ancient trees and bordered by the gentle flow of the Hoëne River, the property invites guests to unwind amidst nature’s tranquility. ​

The hotel offers nine uniquely designed rooms and suites, each exuding calm, beauty, and refinement. Spacious accommodations on the first floor have been restored to their original grandeur, offering sweeping views of the majestic park. In the attic, bespoke rooms and suites charm with generous proportions, comfort, and elegance, each telling its own story through thoughtful design and attention to detail. ​

The on-site restaurant, La Table des Prés, is a central part of the experience, offering a cuisine that is both generous and grounded in the terroir of the Perche. Inspired by the spirit of countryside dining, the menu is deliberately concise and changes frequently with the seasons. The culinary philosophy is rooted in close collaboration with local farmers, artisans, and producers—an approach that mirrors the sustainable vision that guided the house’s renovation. Herbs and vegetables come directly from the property’s potager, while a newly planted orchard will, in time, enrich the dessert menu with its seasonal fruits. 

The estate’s facilities are designed to promote relaxation and well-being. Guests can unwind by the outdoor swimming pool, nestled among cypress trees and stone walls, or explore the expansive park, featuring century-old trees and meandering pathways. The gardens, which include a vegetable patch open to visitors, feature a diverse array of plants, flowers, and trees, creating an environment perfect for strolling, reading, or simply taking in the peaceful surroundings. ​

Les Prés is the passion project of hosts Stéphane Renaud and Éric Brossard, who have lovingly restored the property to create a welcoming and elegant retreat. Their dedication to preserving the estate’s history while infusing it with contemporary comfort is evident in every detail, from the thoughtfully designed rooms to the warm hospitality extended to each guest.
